Spiced Cauliflower Soup
2 tablespoons butter
1 cauliflower – cut into pieces
1 large potato – chopped
1 brown onion – chopped
2 cloves garlic
1 tablespoon grated ginger
1 long green chilli
½ teaspoon turmeric
1 teaspoon garam marsala
1 teaspoon ground coriander
2 teaspoons ground cumin
4 cups vegetable or chicken stock
1x 400ml can coconut milk
*Naan bread, pappadums to serve
*Coriander to serve
Heat the butter in a large saucepan and add onion – cook until soft.
Add all the spices, garlic, ginger and chilli. Cook until aromatic.
Add cauliflower and potato and stir.
Add stock and bring to the boil.
Reduce heat to low and cook for 20 minutes.
Add coconut milk and stir to combine.
Cool for about 20 minutes.
Use a stick blender and blend until smooth, or transfer to a blender.
Reheat soup and put into serving bowls.
Swirl extra coconut milk on top and serve with naan bread, or pappadums and coriander leaves.
